Gazpacho
|I love Gazpacho. I first enjoyed this refreshing tomato-based summer soup at the Georgia Renaissance Festival and have been on the hunt for a similar recipe ever since. There are hundreds if not thousands of ways to make Gazpacho since there’s really no wrong way, but it is traditionally tomato-based.
I like to be able to drink mine like a beverage most of the time so I like the runnier/well-blended recipes best.
I recently found a super simple recipe that is easy to make. This version is essentially a drink. I like to add a little lemon juice to it and sometimes a few finely chopped bits of tomato, cucumber, and onion if I want it more soup like.
